The cajun fish-keeper writes that he/she is having trouble keeping guppies
alive, and that the tanks are displaying very large ammonia spikes. I see no
mention of filtration. Sometimes the plant/fish ratio is just not favorable
enough to eliminate the need for filtration. This is particularly true in
breeding tanks, where the numbers of fish can vary, and feeding can be heavy.
Consider your fitration arrangement. Also adding baking soda to buffer the
tank while also adding Proper pH seems both redundant and risky.
Just my opinion.
