I dunno, but you might try using champagne (sp?) yeast instead of baker's
yeast.  Champagne yeast has a very high alcohol tolerance, about 19%.  When
the CO2 production starts to drop off, save some of the old stuff to culture
the new brew.

Someone else will have to tell you if there's a better way to hook it up.
