Some floating stem plants might look nice, especially as they contrast with  
the val foliage.  Najas does very well and provides a nice airy color  
contrast.  Easy to grow in a low tech tank. It grows so fast for me  that when hair 
algae started invading, I just discarded all the najas that  was contaminated 
and the remaining sprigs of najas filled in quickly.  Water sprite floating 
around might also be nice.
