For low tech I'd be reading Diane Walstad's book.  If you choose to use a
soil underlayment make sure you get something without fertilizer added (this
is hard to find in my experience) or set the soil up in buckets with water
in a warm spot, changing the water every few days to leach out the ferts and
complete the composting of the organic matter.

And for Rainbows I'd ask our resident Australian expert, Dave Wilson, about
plants and fish.
