Joel,

I am pretty sure this plant is Hygrophila difformis.  This is a true 
aquatic, and one of my favorites.  This very adaptable plant has the ability 
to grow emergent in moist soil, at which time it produces growth as seen in 
your picture.  Over time, it will return to the finely divided growth form, 
as long as you keep it submerged.  Also, I have grown the plant in a cool 
tank (65 degrees F), and the plant produced submerged growth similar to that 
in your picture.
