Snails don't eat mulm - they add to it. I don't think that they would add much to the ammonium, etc.  What they eat is usually just a step or two away from becoming part of the nutrient stew anyway.

Kribs do an excellent job of removing snails.  They are peaceful except when breeding and one can see them, as opposed to other snail killers like loaches who usually disappear.  

After the snail problem has been contained, some say the the kribs can be used for bass bait, but I wouldn't know about that.
