"Pearl" grass sure fits the bill(any within the genus). Mexican oak leaf, as you mentioned, Gymnocornis, hornwort, pennywort, Water sprite big time, Hygro's in general and H. polysperma, Utricularia stellaris, even some more ecclectic plants such as Eustralis,M. matogrossense, Ammania, Bolbitus etc are not bad if things are going along well.
Anything that grows at breakneck speed.
