Surprisingly, there is not alot of literature on the subject. The best is undoubtedly Amano.
Go out and buy all three of the "Nature Aquarium" series by Takashi Amano. There is also a fourth book, "Aquarium Plant Paradise", that is dedicated to the different aspects of aquascaping and is magnificent as well.
They are not the aquarium for the average human, but the pix are awesome. He also shows how he does basically everything, so it will point you in the right direction.
He does leave out some of the "finer points", but that is what this list is for....
