Actually, in the case of Muscovy ducks, this is entirely ethical to kill
the ducks.  Muscovy ducks have literally taken over many ponds, and are
just as exotic to the U.S. as Oscars and Tilapia.

I have an article on my web site on how to slaughter and dress a muscovy
duck, as well as some cooking tips.  It tastes somewhere between veal
and roast beef but if you don't show your guests the carcass they will
swear they are eating some part of a cow and not a bird.

Go to http://www.yonderway.com/rural and on the search window put
"chicken" (since the article also talks about chicken butchering). 
There will be a few hits but the right one should be apparent.
