Speaking of recipes, there is a fish weir on the Richeleau River (which
connects Lake Champlain to the St. Lawrence River) just north of me in
Quebec, that captures freshwater eels for shipment to France. They get
$7 a live pound at the weir, which makes about $500,000 a year for the
family that owns it. The weir has been in existence since the 1600's.
Perhaps we could turn this new native fish nightmare into a cash cow.
Does anyone know any French fish importers we could send a free sample
of these introduced eels to?
