  The first thing that comes to mind is sex ratios and how they're affected by water chemistry/temperature.  You could devise all sorts of experiments to look at that.
   
  We had a presentation by a college senior who had just done a project on the effects of atmospheric pressure in spawning behavior of Betta splendens at the Philadelphia Area Betta Society show this weekend.  He only worked with females, and it was pretty interesting.  There are lots of possibilities for him to expand that study.  There would certainly be a lot of other choices of species to do this type of research.  Corydoras in particular come to mind.
