Maybe the eggs that float are to be fed to Mop spawners and the eggs
that sink go to Peat spawners.....8-)   

Ok..... had to say that.   Ive never had the problem with eggs
seperating like that.. nor do the eggs stick to my hatching jars.   I do
use alot of aeration in a 1 quart spaghetti sauce that i use for
hatching my bbs.   I use a rigid tube attached to airline thru a hole in
the lid of the Jar that im using that goes to the bottom part of the
jar.   Works well for me and ive been doing this for over 15 years now.
