    Sounds as if you have insufficient ventilation, or you are making your 
cultures too wet to begin with.
    Your medium should be about the consistency of mashed potatoes when you 
first make it.
    As for ventilation, coffee filters and a rubberband work great for 
covering the culture. If you use mason jars, just place a coffee filter over 
the jar and screw the ring down over it. I make 30+ cultures a week so I 
keep it easy and use ventilated lids made specifically for use with deli 
cups. I buy my containers and lids from:

This is the cheapest source, but minimum order is 240 cups w/ lids.
