Perhaps vitamins play a role in the coloration of fish, but indirectly. A healthy specimen will have a balance of the necessary vitamins and minerals for their circulatory system, allowing them to move blood faster, and more effectively. More blood to certain pigment cells, will change their color. My diapterons change colors depending on mood/fear. They are certainly most spectacular when the males are chasing one another around competing for the ladies. Its no brain twister to relate health to observed color intensity.
