It has to do with the geology of the sites.  If I remember Brian  Watter's 
talks correctly, and if I don't - sorry Brian, Nothos primarily occur  only in 
alkaline soil conditions.  So soft water or not and I'm sure it  hardens as the 
pool evaporates, the soils keep the Ph on the alkaline  side.
