[Killietalk] Alternate vinegars for vinegar eels, was Dried Vinegar Eels
Mike Jacobs experiment reminded me that I set up my own experiment last
month. Somewhere around the 27th of October someone with an allergy to
apples (sorry, I lost the original post and don't remember who) asked
about using an alternate for cider vinegar to culture vinegar eels. On
the 28th of October I set up a little experiment to see if any of the
other vinegars would work as well as cider vinegar. I set up four 26 oz
jars each half filled with vinegar and topped off with water. Each jar
received a slice of pealed and cored apple. The jars were inoculated
with 2 mL of a mixture of cider vinegar, mother of vinegar, and vinegar
eels from an old culture. This inoculant was thoroughly mixed prior to
being added to the cultures. Four different vinegars were used. I
managed to find red wine vinegar, malt vinegar, rice vinegar and cider
vinegar in the cupboard. The cider vinegar was set up as my control.
I checked the cultures today and the results look good for our friend
with the allergy. As of today the malt vinegar has by far the most worms
growing in it. They are literally crawling up the sides of the jar and
clumping. The rice vinegar is second in its number of worms followed by
the red wine vinegar and finally the cider vinegar. It looks like I may
need to change my culture methods. No attempt to accurately measure the
number of worms was made but it was easy to see the difference in each
of these four jars.

I'm going to set up a red wine vinegar, vinegar eel culture this evening
and see how it goes. I'll let the list know how it is doing in a month
or so. I'll set up a control with my usual cider vinegar as well. This
way I can report back with comparative data.
