Hi Joe,

      Take a small pinch of peat between your thumb and index finger and 
squeeze. If a small drop of water barely squeezes out that is about right. Bob's 
peat is usually just about right as the zipper bags don't loose alot of 
moisture. But the squeeze test on a tiny bit works great. Peat should be black 
looking with moisture but loose enough so it can be fluffed up to a degree easily. 
Don't worry your eggs to death :-).
