Thanks for the on and off list replies.  I certainly didn't intend to stir up controversy; I just want to be sure I do the right thing for these eggs.  And there does seem to be a clear consensus that the shallow water is the way to go to start, and deep should not be needed routinely.

 I'll be working with the shallow water first, and watching very closely.....
