I have no direct experience. That doesn't stop my opinion machine,
though. :-) Camera choice is highly individual, so all I can do is offer
my responses. YMMV.

review of the 5700. The 5000 is also reviewed, there.
Basically, the 5700 is last year's model and the 5000 is the 2001 model.

The 5700 has an unreal zoom range, unlikely to give utterly sharp
results at 5 Mp. Nikon emphasizes incredible macro capability, but uses
too-small diameter lenses (consumer cameras, only), so you need a huge
amount of light for good shots with their cameras. Compare their f
2.8-4.2 to the f 2.0-2.4 of the competition. [The more pixels, the more
noise, so lower iso is needed, bigger lens, or lots more light.]
The main difference is the expanded zoom range and internal electronic
viewfinder on the 5700. Shutter delay is too large for most fish
photography, even with pre-focus. It's almost a tenth of a second, which
is quite a long way on a moving fish. Look for less than 50ms.
It's a nice consumer camera with some great features, but you can do
lots better for the $1200 price being asked.
Cognoscenti among high-end consumer cameras consider the more modern
Sony DSC-F717 possibly is a better choice.
