Regarding the color of the mysis. It depends a little bit on what they are
feeding on, but the body color is as Wright described it...very bland,
somewhat colorless/grey with dots of dark. They may have a slight
greenish/grey tinge when you first collect them, probably from algae
feeding, but that quickly goes away.
The frozen product will be significantly more fatty than those shrimp which
are collected with a dip net. The commercial collection is done at some
depth in the lake (a couple hundred feet or more) and the shrimp have not
used up all their fat/energy getting to the surface. When you collect them
from the surface (they come to the surface during the night) they are less
fatty when compared to the bottom collected. We still find them a tremendous
food and when still live, easily gut-loaded.
