I suspect that the reason Live Oak leaves do not fare as well is becasue they are an evergreen species, whereas the "eastern style" oaks, as you described them, are decidious. So Live Oaks will not draw the nutrients back into the tree from leaves before they're shed like the decidious trees do. So they will have less tannins and would likely breakdown faster than their decidious cousins.
Here's a listing of southern Califonia oak species:
Oak genus (Quercus):
Blue Oak (Q. douglasii) -- deciduous.
California Black Oak (Q. kelloggii) -- deciduous.
Canyon Live Oak (Q. chrysolepis) -- evergreen.
Coast Live Oak (Q. agrifolia) -- evergreen.
Engleman Oak (Q. englemannii) -- evergreen.
Interior Live Oak (Q. wislizenii) -- evergreen.
Oracle Oak (Q. morehus) -- evergreen.
Palmer Oak (Q. palmeri) -- evergreen.
