In adding the acid you are probably eating away the bicarbonate---
your systems buffer. As a result, when it is neutralized by the acid
pH shifts become easier and more dramatic.
Corrective precautions: add some shell grit to your filter. (Oyster
shells work very well in this regard. The Ca they release is
inconsequential. CaCO3 will only start to disolve at pH < 4.)

This is CONCENTRATED HCl. This stuff is very dangerous and should be
treated with great caution. Do not inhale the fumes or spill any.

Always were gloves.
Keep a bottle of Sodiumbicarbonate solution on hand at all times
incase of emergency. Milk is also effective at mopping up acid spills
and neautralizing the acid in case of a spill or burn.
