Determination of frys' sex

Hi group. I'm always wondering at what stage of the
eggs/frys development that the sex of the frys is
determined. 

1) It's determined when an egg is fertilized by the
sperm. Or
2) It's determined when the embroys are developed
(during the incubation period). Or
3) It's determined when the frys hatched out. 

Some people mentioned that temperature will determine
the sex ratio of the frys. But is it the temperature
during the incubation period or temperature during the
fry stage?
