When I bred SJO, I used a 5 gal. tank with about an inch of peat on the
bottom, and a trio of fish (one male, two females). Removed the peat weekly
and changed 1/2 to 2/3 of the water, then added fresh peat. The fish were
fed in the tank, but primarily live foods, to keep the peat cleaner.
Incubation was a month to six weeks. These eggs do incubate quickly, and
will also incubate in water (or in the bottom gravel of a tank). Others on
this list have successfully raised SJO without ever using or
gathering/handling peat (see the archives, or ask how they did it).
As to how long it took to get the fish that big, I don't have a clue - I
grew them up in a 20 and they grew at different rates, so it was hard to
tell and there are many variables involved: health and general vigor of the
fry, how much and what you're feeding, how clean you keep their water, etc.
