Al, you clearly need additional ventilation in your attic. The humidity
my fishroom produces in the winter has allowed me to disconnect my
humidifier
and maintain levels of around 70% during the winter. In the Fall and for a
short time in the Spring, when the furnace isn't running often enough, I
will use my dehumidifier. I have never had problems with water collecting
in the attic or windows.

Yes it will suck up all of the humidity and in the winter time it will
collect on the under side of the roof when it gets real cold and then when
it thaws you will think the roof is leaking because the water will drop down
onto the ceiling. Come pay me a visit and I will show you the water stains
from it or the wet ceiling in the winter.
