My experience matches Lee's. The stuff is incredibly hygroscopic, and clumps
and turns to very hard lumps after a while. For such things (BS eggs
included) I find an extra seal of electrical vinyl tape on the lid before
refrigerating, and then allowing the can to warm fully to room temperature
before opening (overnight), can be a real help at keeping them dry and
fresh.
Opening a really cold can creates dew that defeats the purpose of dry cold
storage.
