I too have at least one aluminum pot which I still occasionally cook in. I prefer stainless steel.  The theory that aluminum is toxic is no doubt sound but how much aluminum actually comes off during cooking? In the case of killifish; once the peat is rinsed squeezed out and further diluted in tank water we may be talking about parts per billion or even trillion.  If you consider air pollution, copper and lead from your plumbing, radon from your basement, fluoride from your water company, second hand smoke and it is amazing this planet supports life at all.
 
As to aluminum and Alzheimer's.......what were we talking about?

Thank U Tranquility Base.  I didn't figure the aluminum could be that bad
when I spent a number of hours browning and boiling beef for ragout
yesterday.  I figured that maybe my Alzheimer's might be due to the aluminum
but do killies get Alzeimer''s?  By the way its a great recipe with ginger
and everything if you'd like it.
