I live an hour north of the Salinas Valley, and forget that you folks near
the Right Coast get cold-storage "iceberg" lettuce with most all the nice
tasty green outer leaves long-since wilted and stripped off. The tough,
white center stuff is, as Lee points out, not too good. Even *I* dont eat
it!

I use the softer green outer leaves, and it doesn't seem to matter much if
it's butter, romain or iceberg, as long as the stuff is tender and works for
growing infusoria.
