RE: Where can I get invert cultures?
I live in Florida as well. Most of the time I don't even add yeast to the
micro-worm culture. I also use Gerber mixed grain baby cereal. Production
is always high.

Try to make the "polenta" thinner and add just a trace of yeast. It will
certainly slow down fermentation.
