Invert cultures

Ok, there has been a lot of talk lately about freshwater inverts and culturing
them. I have a 10 gallon tank that I want to set up to keep these critters in.
I don't need to produce cupfuls of food, but it would be nice to pull some about
once or twice a week to feed my fish with. Now, that said, what kind of set
up do I want? Ive got tons of hair algae and java moss, which I thought would
make a nice source of cover and possibly food? What organisms would be most
suited to this type of thing? Where do I get them? A requirement would be that
anything I throw in there does not produce a foul odor or grow up and fly around
the room. Is it possible to keep a variety of cultures mixed in a 10?
