If you cann't find a gar expert then see if your local library has the Peterson Field Guide to Freshwater Fish of the United States.  It has all the native gar species with illustrations and range maps.  The text may have references to color variations.

Subject: Gold gar problem

You are going to think I am nuts, but my son caught what we think is a gold
gar in the natural (4 feet long) here in Oklahoma.  FIRST, how do we tell
what we got?   It doesn't look like any gar we have EVER seen and has no
spots but is a gold/orangeish color.  SECOND, where is there a gar expert we
can contact in our area?    My son currently has it in his refrigerator.
