Lotus
Lotus roots are used in Japanese cuisine. My favourite dish has to be
Karashi Renkon, pickled lotus root with mustard. But lotus are very
interesting, the leaves have a number of holes in the center and these large
leaves and the attached stalks can be used to strain impurities out of
water. Just make the leaf form a cup shape pour in some water and collect
the strained water from the end of the stalk.
Typically, these plants are grown in large muddy ponds in the Japanese
countryside. The depth is usually 50cm deep and the pond is often stocked
with fish that will eat snails once the leaves are growing.
