fermentation CO2 baking soda yeast nutrient



I have been running an experiment for
the last 30 days to determine the effect
of baking soda and yeast nutrient in
various recipes in DIY CO2. I have
posted the some of the first results at
http://www.mnsi.net/~waj/CO2chart.html
but I am unsure of what role the baking
soda is playing in the recipes. I have
tried adding baking soda to
fermentations that have come to a
complete halt and have noticed a
reaction in the bottle much like adding
baking soda to an acid. What is the is
happening here? Does anyone else who
knows about fermentation have any ideas
on improved recipes?
