Planting Anubias

Any of the three will work fine, although the definitions of "sand" and
"gravel" get mushy at the sizes we usually discuss for planted tanks.
(1-3mm) What some of us call fine gravel, others call coarse sand.

Anubias will do fine in even coarser gravel. What they don't tolerate well
is compacted substrates with a high organic content that are likely to
become strongly anaerobic. It is my feeling that they don't transport O2
into the substrate as well as some plants.
