acumulate nutrients

I have heard that plants can purify the water and absorb amonnia, 
nitrates and Phosphate from the water, and due to the fact that 
aquariums are closed systems , why all that nutrients are acumulated if 
water is not changed frequently, just adding what is evaporated?? plants 
are not supposed to absorb all from the water and it would come a time 
that the water become pure, and would lead to a perfect environment to 
grow??
 I have read that plants can exhaust nutrient levels very fast, how true 
is that?
