Baking soda

I am going to build a CO2 injection system and have read a wealth of
info. I have a couple of questions that I am hoping you can answer. When
baking soda is used, it is mixed into the yeast solution, correct? How
does this work (chemically) to buffer pH fluctuations? What is the best
type of yeast (length of production of CO2)? What is the best mixture
(length of production of CO2) for the reactor (2Liter)? Thanks.
