Ive been brewing for many years. Brewers yeast has great CO2 production.
You need to be careful as to which yeast to use. Many produce phenols,
esters, and sulfur compounds which are desirable in some brews. I would
try your local brew shop and buy a dry champagne type yeast. This would
have a very high alcohol tolerance and be relatively clean as far as
byproducts produced.
