I've built fans into my hoods and can say one thing for certain: the noise
a fan makes is far more important than the voltage it requires.  I believe
that, on the main, DC fans are quieter than AC fans, but I can't really say
that for certain.  I found a pair of 115VAC fans that were very easy to wire
up, but they sound like a vaccuum cleaner.

With DC fans, you can always run a 24V fan at 12V, it just won't run as fast.
But then again, it won't be as loud either.  I set mine up so that they're
in series with a potentiometer, so I can slow the fans down when I want them
to be ultra-silent.
