Your plants are having a great time removing CO2, and it is this removal
that is raising the pH. It sounds like you need a CO2 generator system of
some sort, if you want to keep the pH from going so high.

There are lots of easier ways to get iron to your plants.  (Dupla drops,
Poor Man's Dupla Drops, some soil under the gravel, etc.)  I didn't know
that beets had a lot more iron than most other plants.  Is it really a LOT
more?  I wouldn't subject my fish to a beet diet (unless they really like
beets) just to get iron into my tank.
