DIY CO2 using gelatin

Does anyone make DIY CO2 with gelatin? Here's one of the recipes:

This is more time consuming than the traditional sugar/water/yeast method, but
does the benefit outweigh the hassle? My mixture lasts about 3 weeks, but I am
annoyed by the initial over-production of CO2.
