I'm interested in the answer to this question too, because mine do it as 
well - sometimes just one shoot off a plant. I have suspected nitrates, 
since it seems to happen more when other plants are also turning bronze from 
nitrate deficiency, but even keeping a close eye on nitrates seems to make 
it happen less, but not stop it from happening.
