if you add 1/2 tsp of bicarbonate of soda to yeast bottle it levels out the reaction time. I use a 2 litre bottle with 2 cups sugar. 1/8 tsp yeast,1/2 tsp bicarb soda and 1.1/2 litres of water in a 2 litre bottle.
